'Pickle Sickle' may have health benefits

A new popsicle made from pickle juice called the “Pickle Sickle” is touting health benefits, referring to an ASU study that shows vinegar combats insulin spikes after a high-carb meal. Carol Johnston, department of nutrition chair and author of the study, has tested the insulin effect from the product, and "it looks like it's working." Although more data analysis is necessary, she says, frozen pickle juice may be a good way to get people to eat their vinegar.
